We had a wonderful dinner at Le Bubbole at Palazzo Gattini in Matera. The amuse-bouches were playful and surprising.
I started with ‘Our eggplant parmigiana’ (€22), a deconstructed version served with fior di latte ice cream on the side — it was so refreshing I ordered another scoop for dessert. Lori had the ‘Marinated amberjack, puntarelle, mango and passion fruit’ (€26).
For pasta, Lori had the ‘Spaghettone with garlic and oil, duck and tarallo’ (€26), while I had the ‘Stuffed tagliatella — suckling pig, cardoncelli mushrooms and canestrato di moliterno cheese’ (€25).
My main was ‘Lamb, artichokes, potatoes and miso hollandaise’ (€36), which unfortunately wasn’t cooked to my liking due to a miscommunication with the waitress. Lori’s ‘Turbot in crust, truffle and baby chard’ (€38) was spectacular.
The wine pairings were excellent, the service was charming, and the young chef Gabriele Marino was warm, sweet, and incredibly passionate. He even came out as we were leaving to personally discuss the meal with us.
Overall, the creativity and execution were outstanding. Highly recommended — we’d definitely return.
